Curtin University decided to invest in sushi production equipment from Sushi Machines to produce fresh sushi in-house to better quality and cost levels.

Sushi Machines Pty Ltd trading as Sushi Machine was engaged by the University to supply a range of sushi equipment including an Autec ASM880CE Maki Robot, ASM780CE Rice Mixer, ASM410CE Nigiri Robot and ASM250CE Maki Cutter.

Impressed with the sushi machines after installation, Executive Chef Christophe Jerome sought a solution for improving their rice washing process. He was concerned about the cost and inconsistent process of raw rice portioning, time spent washing the rice manually, and time wasted measuring the correct water quantity for cooking.

The Kobota KP-90KN-CE Rice Washer, which executes this process with a single push of the button, was supplied to the University. The rice washer is designed to automatically ‘suck’ the stored rice into a washing chamber, wash it, add a measured quantity of water for cooking, and then discharge into a rice cooking pot.
