Tasty Trucks use combi oven to produce sushi rice

In December 2008, Sushi Machines Australia were commissioned to help a major food company with 55 delivery trucks to produce high volume sushi on a daily basis. Tasty Trucks learned about Sushi Machines ability to assist in the set up of a commercial sushi kitchen. As a customer of Sushi Machines Australia, Tasty Trucks were offered the consultancy service free as part of Sushi Machines Australia’s on-going assistance to their customers.

A few days after the delivery of the Autec ASM860 Maki Robot and the ASM760 Rice Mixer, Sushi Machines Australia’s team guided and prepared the staff on how to produce sushi efficiently. The challenge given by Tasty Trucks was to use their Combi-Ovens to cook the rice instead of rice cooker.

Sushi Machines Australia (SMA) did the research back in their base in Perth using a Combi and it was a success. With this, SMA then duplicated the process but adjusted on the parameters to support the increased production volume.

Tasty Trucks also learnt on how to produce tuna mix using large volume canned tuna and a mixer instead of doing it by hand.
