Blueprint Catering is a major catering company, Café and food services supplier to the Melbourne University. Prior to engaging Sushi Machines , Blueprint was purchasing their supply of sushi. However, they felt that the quality and cost would be significantly improved if they can produce the sushi themselves. This would also ensure consistency and speed up reaction time to customer’s needs. With these requirements, Blueprint purchased a Rice Mixer, Maki Robot and Nigiri (Shari Dama) Robot.
As Blueprint has recently moved into a new section of the Melbourne University, they have the option to increase their product range and naturally sushi would be their key new product.
The training took only 2 days and within that time, the staff at Blueprint were able to produce all the types of sushi they want. They were also taught the safe and efficient method to transfer hot cooked rice from the Combi-Oven to the mixer using the Rice Nets. Due to the volume and range of products they produced in the morning, Rogan, the Chef has highlighted that ‘we must work in this very limited space’. It was a challenge given to Sushi Machines to work out a production schedule based on this requirement. After the training, the staff were pleased that the work flow did not interfere with their needs to do other products.
