MasterTherm thermal fluid heated fryers from Heat and Control feature a unique U-tube heat exchanger that heats cooking oil for consistently uniform colour and texture of products.

To sustain a constant cooking temperature, these thermal fluid heated fryers feature a heat exchanger through which circulates a small volume of thermal fluid. This process not only enables consistent cooking oil temperature, it also enables the fryer to adjust to changes in product load.

Uniformly heating the oil also removes the occurrence of oil currents which can force the product to one side of the fryer, resulting in coating damage and uneven transfer to inspection and packaging operations.

The heat exchanger is specifically designed to be durable and easy to maintain and features generous spacing between the tubes for trouble free cleaning. The spacing also limits the accumulation of fines that can often result in overheating of the heat transfer tubes.

MasterTherm industrial fryers also feature an adjustable feed conveyor for the handling of breaded on non-coated product as well as for dropping batter coated products into the oil. Conveyors are available in 71cm, 76cm, 91cm or 107cm widths, however, custom sizes are available.

MasterTherm thermal fluid heated fryers can be supplied with multiple temperature zones, a selection of product conveyors, stack heat recovery, and continuous fines removal systems.

MasterTherm commercial fryers can also be custom designed to suit a wide range of applications.
