For formulation development and test cooking of meat and poultry products which do not require colour development, Heat and Control's Pilot MPO-D Series convection oven offers accurate control of cooking time, temperature and moisture content. The patented controlled-moisture process cooks rapidly while sealing-in the products natural moisture and flavour producing up to 25 per cent higher finished yields. 
Available with direct and indirect gas-fired or electric heating, the oven operates with infinitely variable cooking time, temperatures up to 550 degrees F, and moisture control by volume from 8 - 90 per cent. Like larger MPO convection ovens, the Pilot oven features an internally water-cooled pan and belt supports, plus automatic clean-in-place and belt washing systems which greatly minimise clean-up costs.
