Gold Peg International's new mozzarella making equipment, the GPiCS, eliminates the use of bath cook water whilst producing high-quality Mozzarella and Pasta Filata cheese varieties with composition, sensory and functionality similar to a traditional wet cooker product. The GPiCS was specifically developed by GoldPeg to industrially produce Mozzarella and Pasta Filata cheese varieties with the support of an Australian Government grant and testing at CSIRO Australia.
