Gold Peg International presents the GPiCS natural mozzarella cooker stretchers designed specifically for manufacturing Mozzarella cheese and Pasta Filata varieties.
GPiCS natural mozzarella cooker stretchers allow various ingredients to be added to natural mozzarella cheese including flavours and powders without losing them to bath cook water, enabling food manufacturers to further develop their Mozzarella product range.
A specialist in direct steam injection cooking and processing technology, Gold Peg identified a need for a more efficient continuous cooking system for sensitive Mozzarella and Pasta Filata products, and which also addressed environmental concerns.
Specifically developed by Gold Peg for Mozzarella and Pasta Filata varieties, the GPiCS was designed with the support of an Australian Government grant and extensive testing at CSIRO Australia.
Designed as an automated fully hygienic enclosed system that has no bath cook water and very low shutdown wastes, GPiCS natural mozzarella cooker stretchers produce high quality natural Mozzarella and Pasta Filata varieties with composition and functionality similar to traditional wet cooker products.
