With the RotaTherm continuous cooker, ingredients are cooked in a single pass by injecting steam into the product as it is being agitated while moving up the cooking column.
The RotaTherm’s precise and thorough cooking achieves:
- High levels of food safety as bacteriological/thermal kills rates are achieved consistently and at lower temperatures
- Consistent efficient use of the functional ingredient like starch
The cooking process is physically gentle and maintains the integrity of the particulates for attractive presentation.
The heating process utilises direct steam injection and HTST (High Temperature, Short Time) treatment, a process that minimizes the impact on the ingredient vegetables.
