DELTATRAK, represented in Australia by Global Cold Chain Solutions , has released a thermometer that allows food service providers to track the temperature of their products. Regulations require that once food has cooled to temperatures below 60ºC, it must be cooled down to below 5ºC within six hours.
The Heat/Cool thermometer tracks cumulative cooking or cool-down rates and monitors the cool down process by taking temperature readings. It will alarm when internal cooking or cooling temperature has been reached.
A teflon-coated probe allows the probe to be placed inside hot foods in the oven. Alternatively the magnetic thermometer can be adhered to the front of the oven or attached by a metal clip to the side of a pot. The thermometer can be calibrated and operates from -50ºC to 200ºC and is ±0.5ºC accurate.
