The FOSS MeatMaster in-line fat analysers now come with new software to scan cuts of meat for optimal bacon production.
FOSS MeatMaster in-line fat analysers are capable of determining the use of cuts of meat according to size and shape as well as fat content.
For instance, pork belly cuts are placed on the MeatMaster belt and scanned using X-ray technology.
The in-line fat analyser can determine the fat content, weight, length, width and thickness, displaying the information on the instrument screen along with a picture of the pork belly shape. The meat is also scanned for foreign objects.
A key function of the MeatMaster is sorting the cuts of meat based on the scanned information. This is done by an automatic sorting system, which routes the cut of meat for appropriate processing.
The MeatMaster allows the user to set a range of criteria for the scanning to suit specific requirements. This can include specifications such as fat content, thickness and width.
The MeatMaster in-line fat analysers can scan up to 1,500 pork belly pieces in an hour.
Advantages include objective grading, improved curing process due to optimal use of raw material, improved consistency of finished products and better productivity.
The new software for MeatMaster can also grade pork legs for production of dry ham products.
