Leading direct steam injection continuous cooking systems specialist Gold Peg International will showcase their industrial food equipment at the Australian international food processing exhibition, Foodpro 2011.  

GoldPeg specialises in design, manufacture, installation and support of innovative food processing equipment that seeks to improve the productivity of food manufacturing companies globally.  

GoldPeg is showcasing their newest continuous cooking and cooling system, the RotaTherm CUBE, which cooks and processes a wide range of food products such as processed cheese, baby food and sauces.  

Key features of the RotaTherm include adjustable heating and processing parameters such as cooking temperature, direct steam injection heating profile, shear, pressure and mixing with a precise level of control.  

Measuring only 1.6m x 1.6m x 1.6m, the compact RotaTherm CUBE delivers throughput rates of up to 1,000 kg/hr, cooking temperature range up to 145ºC and direct vacuum cooling down to 60ºC.  

GoldPeg will also be exhibiting the GPiCS Mozzarella Cooker Stretcher, a low pressure, low shear direct steam injection continuous cooking and stretching system.  

The fully enclosed hygienic GPiCS is specifically designed to produce sensitive natural mozzarella, string cheese and pasta filata cheese varieties without bath cook water.  

GPiCS was developed with the support of an Australian Government grant and underwent extensive testing at CSIRO Australia to meet the environmental requirements of food manufacturers.  

Organised by Diversified Exhibitions Australia , Foodpro 2011 will be held at the Sydney Convention & Exhibition Centre, Darling Harbour from Sunday 10 July to Wednesday 13 July.
