CSIRO joins ANSTO in molecular study of food
AUSTRALIAN scientists may soon be designing new foods with improved taste, texture and health-improving qualities, according to the Australian Nuclear Science and Technology Organisation (ANSTO).
Under a signed agreement between CSIRO Food Futures Flagship and ANSTO, scientists from both organisations will seek to determine the molecular structure of the foods we eat.
Initial projects will study the structure of starch in relation to its long-term nutritional benefits in reducing the risk of colorectal cancer and the incidence of diabetes.
ANSTO’s capabilities in characterising materials, together with CSIRO’s broad food research experience, will be combined to better understand food ingredients and food safety.
